Courgettes originated in America and were cultivated in Italy in the 18th century. They are a type of ‘zucchini’ and belong to the Cucurbitaceae family of plants along with cucumbers and melons. They are versatile, in season at this time of year and are packed with nutrients, many of which are important for fertility such as folate, vitamin C, zinc, iron, various B vitamins, fibre and magnesium. Courgettes contain anti-inflammatory properties and are also linked to helping regulate blood sugar levels – both of which are important in relation to fertility.
Summer Courgette and Feta salad
4 small courgettes
1 pack of feta
1 spring onion
1 avocado sliced
1 lemon, juiced
50g toasted, peeled almonds
Handful of mint leaves
Splash of olive oil
Salt and pepper to taste (optional)
Slice the courgettes into very thin round slices or make into ribbons and chop the spring onion thinly. Combine the vegetables in a bowl and pour over the fresh lemon juice. Mix and leave to rest for about 20 minutes. Next add the sliced avocado, almonds (chopped) and mint to the vegetables, drizzle with olive oil. Cut the feta in to cubes and sprinkle over the top of the salad. Enjoy!
