Nutritionally great- packed full of fibre, potassium, protein and numerous vitamins and minerals from the eggs, banana and fruit topping to keep you fuller for longer. Enjoy!
To make you will need:
1 ripe banana
75g Blackberries
150g buckwheat or almond flour
150ml milk of your choice
1 egg
1/2 teaspoon baking powder
Honey- to serve
Fresh fruit of your choice to sprinkle over.
How to make:
Place the flour and baking powder into a bowl and stir together. Break the egg into the bowl, add the milk and beat to make a smooth batter. Slice the banana thinly.
Pour a splash of oil into a frying pan, roll it around to cover the surface and heat until hot. Gently heat a non stick frying pan with a little oil and spoon a ladle of the mixture into the pan in a circle, place a few slices of banana and blackberries on top and allow to cook gently for a couple of minutes and then flip it over and allow the other side to cook. Repeat for all pancakes. Serve with honey and fresh fruit and sprinkle with seeds. Enjoy!
