Warm up this winter with this nutritious celery soup

Did you know? Celery contains a plant compound called Apigenin, which has been found to possess anti-inflammatory, antibacterial, antiviral properties…great for supporting the immune system this winter. It is fantastic for hydration, low in calories, helps to lower blood pressure, good for the skin, hair and bones and is a great source of vitamin c, potassium and calcium.

Warming Celery soup (makes 4 portions)


50g butter

1 large onion, finely chopped

2 large potatoes, chopped

400g chopped celery

Splash of cream

1 veg stock cube

450ml boiling water

Pinch of sea salt

Pinch of ground pepper

A couple of pinches of nutmeg

How to make:

In a saucepan, melt the butter. Reduce the heat to a minimum. Add the onion, potato, and celery and cook for about 5 minutes on low heat. To avoid sticking, stir constantly.

Add the salt, pepper, nutmeg, and a chicken stock cube; cover with hot water. Bring the water to a boil. Cover and cook on low heat   (about 10 minutes) until the vegetables are tender. Blend the soup a bit at a time using a blender. Just before serving, add a splash of cream and stir. Enjoy… Great with some warm sourdough!
