Chilli, ginger king prawns coated in garlic

Seafood and fish provide us with many important nutrients for health and fertility including protein, omega 3 fatty acids, selenium and zinc.

Are you partial to prawns? good news if you are as they are a great source of protein and are low in fat, making them excellent health and fertility food. Prawns are high in omega 3 fatty acids, iodine, selenium, zinc, vitamin D, and A, as well as significant amounts of vitamin B12, B6, and niacin. They’re also rich in iron, which aids in the production of red blood cells.

Chilli- ginger king prawns coated in garlic

Ingredients (makes 4 portions)

20 large raw prawns, deveined with shells on

2tbsp of extra virgin olive oil

Seasoning -pinch of black pepper, turmeric and sea salt (optional)

2 cm fresh ginger root

½ chilli (finely chopped)

2 tbsp fresh parsley (finely chopped)

3 cloves of garlic

1 lemon, quartered

120g butter (soft)

To make:

Place the garlic, ginger, butter, chilli and seasoning (optional) into a small pan over a low heat until the butter melts. Remove from the heat and add the parsley.

Heat a griddle pan and pour in the olive oil. Thread the prawns onto individual skewers, coat in the ginger, garlic, butter mix and place each prawn in the pan for 3-4 minutes on each side until pink – ensure thoroughly pink as they need to be properly cooked to avoid food poisoning.

Place the prawn skewers onto a platter and serve with a Greek salad and some olive bread or sourdough…Enjoy! Great on the BBQ too.
