Here’s a great fertility-friendly party (or anytime) snack that’s quick and easy and bursting with key nutrients for fertility.
Are you partial to prawns? good news if you are as they are a great source of protein and are low in fat, making them an excellent health and fertility food. Prawns are high in omega 3 fatty acids, iodine, selenium, zinc, vitamin D, and A, as well as significant amounts of vitamin B12, B6, and niacin. They’re also rich in iron, which aids in the production of red blood cells.
Cucumbers are low in calories, great for hydration, reducing inflammation and are a good source of vitamin C, K magnesium and fibre. They contain an antioxidant called quercetin which helps reduce swelling.
Avocados are amazing and are packed with more than 18 nutrients. They are a good source of healthy monounsaturated fats and contain a small amount of carbohydrate so great for helping balance sugar levels.
King Prawn and Cucumber Bites (makes 12 bites)
Ingredients
1 cucumber
4oz smashed avocado (works well with cream cheese too)
12 cooked king prawns
pinch salt and pepper
parsley for garnish
A squeeze of fresh lemon juice
How to make your King Prawn and Cucumber Bites
Peel the cucumber in alternating strips to leave a striped look on the outside. Slice the cucumber into slices and put onto a pretty plate. Mix the avocado (or /and cream cheese) with a pinch of salt and pepper and a squeeze of fresh lemon juice. Spoon a small amount of the avocado (or cream cheese mix) on top of each piece of cucumber and top each one with a shelled king prawn and garnish top with sprigs of parsley. Serve immediately or keep in the fridge for up to six hours. Enjoy!
