A classic caprese salad is made using fresh mozzarella, tomatoes, basil, and extra virgin olive oil. It is a delicious and wholesome summer side or snack, especially when tomatoes are in season. A soft, white cheese with Italian origins, mozzarella is often produced using buffalo or cow’s milk. Compared to most other cheeses, mozzarella has fewer calories and sodium. Additionally, probiotic bacteria including Lactobacillus casei and Lactobacillus fermentum strains are present in mozzarella. Probiotics can reduce inflammation, boost immunity, and benefit gastrointestinal health. One of the oldest herbs used by humans, basil provides a number of health benefits, including supporting the immune system and digestive system. Additionally, basil includes viceninare and orientin, two significant flavonoid antioxidants. These strong antioxidants support the immune system and protect DNA and cellular components. Vitamins C, A, K, and folic acid are all abundant in tomatoes. One of the healthiest oils in the world, extra virgin olive oil , is abundant in antioxidant polyphenols.

Caprese Salad Skewers
Ingredients (makes 4)
24 cherry tomatoes
12 mini mozzarella balls
24 basil leaves
Extra-virgin olive oil, for drizzling
Balsamic vinegar for drizzling
Sea salt and freshly ground black pepper
To make:
Simply thread the tomatoes, mozzarella, and basil onto mini skewers.
Drizzle with olive oil and balsamic vinegar and sprinkle with salt and pepper. These work well with peach and plum slices too. Enjoy!
