The Mediterranean diet is based on the traditional eating and living habits of people from countries bordering the Mediterranean Sea and is praised as being possibly one of the world’s healthiest diet plans to follow. Research has increasingly shown that it is can a smart choice for women and men who are trying to conceive. Not only is this way of eating abundant in all the healthy foods we should eat more of, such as fruits (including citrus), vegetables, whole grains, beans and olive oil, but it also includes quality protein in the form of fish and poultry (and a little red meat- optional).
This delicious salad dressing combines some of these important staples of the Mediterranean such as extra virgin olive oil, citrus, and honey to make a versatile fresh dressing that is not only delicious but super nutritious too. Enjoy drizzled-over salads and fresh fish.
Mediterranean Citrus Salad Dressing (4 servings)
4 tbsp extra-virgin olive oil
2 tbsp fresh orange juice
1 tbsp fresh lemon juice
1 tbsp white wine vinegar
1 1/2 tbsp local honey, or to taste
1 tsp finely grated lemon zest
1 tsp Dijon mustard
Pinch of freshly ground black pepper, to taste (optional)
Pinch of sea salt, to taste (optional)
