Treat yourself to a bowl or two of homemade cabbage soup this week to help support your health and fertility. Low in calories and packed in important fertility nutrients, including folate, vitamin c, fibre, vitamin k, beta carotene, iron, calcium, potassium and magnesium- this soup will also help keep you warm and cosy. Why not enjoy with some sourdough or rye bread for lunch? Double the portions and freeze for another day- a great way to use up left over veggies….
Homemade cabbage Soup (makes 3-4 portions)
Ingredients:
1 teaspoon olive oil
1 chopped onion
1 clove of garlic, crushed
1 small cabbage of your choice coarsely chopped
1 carrot (peeled and chopped)
900ml water or vegetable stock
1 bay leaf
Pinch of sea salt and ground pepper to taste
Instructions:
Heat the olive oil in a medium pan and saute the onion and garlic for 2 minutes. Add the cabbage and carrot, cook and stir for a minute. Add water or stock, bay leaf, salt, and pepper to taste. Bring to a boil, reduce the heat, cover with a pan lid and simmer for 10 minutes. Serve with a piece of sourdough. Enjoy!
