There is nothing nicer than sitting round the kitchen table sharing a couple of homemade delicious dips and crudites with friends. Love onions? Why not try making this tasty, fertility friendly dip?
Onions contain the flavonoid quercetin which has been shown to possess anti- inflammatory properties and are loaded with vitamin C which is a powerful antioxidant- important in protecting sperm and egg DNA from free radical damage. They also contain the powerful antioxidant glutathione. This is important for both male and female fertility. For men, it is linked to improving sperm quality and health. In women, glutathione may help support egg quality and the health of the embryo after conception.
Caramelized Onion Dip
1 can of chickpeas (you may wish to use dried chickpeas but will need to soak them for a few hours first)
½ tbsp olive oil (for the onions)
1 onion
2 cloves of garlic crushed
Pinch sea salt
65 ml of extra virgin olive oil
½ lemon (juice and zest)
3 tsp of tahini (sesame seed paste)
40ml of water
To make:
Sauté the onions in 1/2 tablespoon of olive oil until golden brown. Rinse the chickpeas and tip into a food processor with the olive oil and blitz until smooth. Add the garlic, lemon, pinch of sea salt and tahini paste along with 30ml of water and blitz again. Add caramelized onions to mixture and blend until smooth. Add water a little at a time as required until you achieve the required consistency. Allow to cool in fridge for at least 1hour, or until cold Enjoy!
