Artichokes are amazing, packed full of antioxidants, low in calories, high in dietary fibre, great at helping balance blood sugar levels, easing indigestion – artichokes are amazing! They were traditionally eaten by the Romans and Greeks to help maintain a healthy gut.
Artichokes are a very rich source of minerals including calcium, iron and magnesium and are also a great source of vitamin c and folate- all important nutrients in relation to fertility.

Artichokes in Butter
Ingredients:
2 large globe artichokes
Juice of 1 lemon
1 bay leaf
50g butter
Pinch of sea salt and pepper
Method:
Bring a large pan of water up to a boil. Cut off the top ¼ of the artichokes, use scissors to trim off the very tips of the leaves. Snap off the stalks. Add the lemon juice and bay leaf to the water. Gently place the artichoke into the water, return to a boil and simmer for 30 minutes. Melt the butter in a small pan over low heat with a pinch of sea salt and pepper. If one of the core leaves pulls away with minimal resistance, the artichokes are finished. Remove gently from the pan and leave to drain upside down in the colander for 5 minutes. To serve place each artichoke on a plate with a little ramekin of melted butter on the side.
